coe-staff: FFLC Week 3

Dear COE employees:

Welcome to week three of the State Employees Food Drive!
For this week, we will be concentrating on Meal Building Blocks: hearty soups and chilis (don't forget vegetarian!); oatmeal; granola; pancake/baking mix; cereal; plant-based milks (oat milk, almond milk, rice milk); pasta sauce, cooking oils.  These items can be dropped off at the Student Pantry (18th and Hilyard) every Wednesday between 11am and 1pm.  Make sure you let them know you are COE!
Mapping the Meal Gap
For the tenth consecutive year, Feeding America conducted their annual Map the Meal Gap study<https://map.feedingamerica.org/county/2017/overall/oregon> to improve our understanding of food insecurity and food costs at the local level. The most recent release is based on data from 2018. In response to COVID-19, they also released a companion study<https://www.feedingamerica.org/research/coronavirus-hunger-research?s_src=WXXX1MTMG> and interactive map<https://www.feedingamericaaction.org/the-impact-of-coronavirus-on-food-insecurity/> that illustrate the projected impact of the pandemic on local food insecurity in 2020. The increased need for food in our state is staggering.
