SUMMER SALAD BAR IN EDST!
WEDNESDAYS through SEPTEMBER 25th

Hello COE faculty and staff!

You are invited to join in a weekly salad bar this summer in EDST beginning THIS Wednesday, July 17.

This is an OPT-IN event only. If you do NOT want to participate, simply ignore this email. You will not be contacted again. If you would like to participate even occasionally, please email Keri Baker at kerib at uoregon.edu<mailto:kerib at uoregon.edu> to be added to the email roster. If you change your mind, you may email Keri at any time to be added or to be dropped for the remainder of the summer.

You may eat over here or take it to go. Sit inside or sit outside. Participate one time or every week. Come alone or bring the entire office. Whatever works for you!  Please plan to BYO plate/bowl and utensils. We have plates and flatware for people to use and wash.

NOTE: All COE work study employees are invited to eat for free and without providing a contribution. We hope to provide enough for students working Wednesday shifts in all departments as well as the student workers in SAS, the Learning Commons, and on Eric's crew. If you are willing to bring in a bit extra of your item each week, donate an extra dollar before shopping day, or bring in a one-time extra donation of a non-perishable item or paper plates, to help make that happen, it would be very much appreciated! If you supervise students please let them know they may come over and get lunch beginning this Wednesday - thank you!

A reminder will be sent each Monday morning ONLY to those on the roster. Participation is then again OPT-IN for that week. If you do NOT plan to attend that week, simply IGNORE the reminder.

Each week, you may participate in one of the following ways. An RSVP is preferred so we can make sure to provide enough greens for all who plan to attend.



1.       RSVP to the Monday reminder email by 3:00 on Tuesday to let us know that you plan to attend and contribute a food item.  See list of suggested items and quantities below. We anticipate multiples in most categories. We are going to free-style the menu for now but we can switch to an online sign-up sheet too. Optional: include the item(s) you plan to bring.



2.     RSVP to the Monday reminder email by 3:00 on Tuesday to let us know that you plan to attend and contribute to the weekly Costco fund. Contributions need to be in the EDST office by 3:00, please. We will use those funds to purchase greens, a protein, extra veggies, and staples (as the budget allows) each Tuesday afternoon at Costco. There will be a jar in the EDST kitchen each Monday through Wednesday between 9 and 4. Amount donated is up to you and private but a suggested guideline is below:



Graduate Employees 1.00 - 2.00

Staff 2.00 - 3.00
Faculty 3.00 - 5.00


3.      BRING in a food contribution on Wednesday morning if you forgot to RSVP or changed your mind.


4.     Not optimal BUT...if it's lunch time on Wednesday and you would like to have salad bar but did not bring in an item or donate earlier in the week, grab a couple bucks for the donation jar and come on over anyway. There will probably be plenty of food to provide a few extra people a meal. Just double check with us to be sure!

DETAILS:

If it's your first time joining us, please bring in your favorite salad dressing to keep in the EDST frig. Label it "to share" and include the date. If you use a special dressing that you don't want to share, skip this step and just BYO each week.

Please bring all food items pre-washed and/or prepped in a container with your name on it or a baggie. You are welcome to being a larger quantity of a non-perishable item (case of canned beans, large bags of nuts, seeds, dried fruit, cheese, etc.) and have that count for a few weeks.

If you have greens in your garden and would to bring them in as your contribution, please let us know before 12:00 on Tuesday. Otherwise, EDST will provide organic greens from Costco each week based on the estimated attendance from RSVPs.

SALAD BAR IDEAS - or just bring whatever your garden, CSA box, or grocery cart may hold!


? About 2 cups of salad veggies: tomatoes, carrot, radish, green onions, peppers, etc.

? About 2 cups protein: meat, cheese, beans, boiled eggs, tofu, etc.

? 1 - 2 cups extra topping: bacon, croutons, olives, nuts, seeds, etc.

? Container of composite salad (potato, bean, pasta, etc.)

? Bread and butter (or similar)

? Fruit

? Dessert

? Summer beverage (y'all know the rules...)

? Whatever inspires you!
